What I find interesting about working with students through living labs is the scientific approach. We normally work on several projects at the same time, so we don’t always have time to rethink certain choices. A couple of years ago we got students to look into what is more sustainable; paper towels or a hand dryer? We used the resulting literature study for years to justify the choice that we made within our organisation.
