On Tuesday 20 May, in collaboration with Future Food Utrecht, we will organise a culinary Asparagus dinner. During the dinner, enjoy a delicious four-course menu with amuse and matching wines and learn more about the background of this vegetable. Between courses, researcher dr. Pita Verwey from Future Food Utrecht will tell us more about the importance of biodiversity and the benefit of variety on the plate. We will also be taken into the wonderful world of asparagus cutting.

It promises to be an interactive and very tasty evening in the Faculty Club. Come along and discover the fascinating world of asparagus!

Programma

  • 17:45 - 18:00: Walk-in with welcome drink and amuse
  • 18:00 - 18:15: Welcome and introduction of speakers
  • 18:15 - 22:00: Asparagus dinner
  • 22:00: End of the evening

The cost for the Asparagus Dinner, four-course menu including amuse and matching drinks, is EUR 67.50 per person.

About the speakers:

Pita Verweij is an ecologist whose work focuses on land use and biodiversity within the context of natural resource management. With experience across diverse tropical and temperate ecosystems, her recent research integrates science, policy, and practice, emphasizing the importance of biodiversity and ecosystem services as a foundation for conservation and sustainable food systems.

Johan Buijs is an asparagus grower. In the woods near Bilthoven, the Buijs family has been growing asparagus for 30 years: one of the last true seasonal products we still have in the Netherlands. Asparagus is a vegetable that needs a lot of attention and cannot be grown just anywhere. When we think of asparagus, we often think of the south, but it also does well in the poor sandy soils of the Utrechtse Heuvelrug. Johan and his wife Karen are the third generation on this farm.
